Cooking with Oils – Oregano

I cooked with oils last night – in this case oil. Singular. And it was amazing! I had added Oregano to my Essential Rewards order last month, but my intention wasn’t to use it for cooking. I ordered it for health reasons. At the time I couldn’t seem to stop getting a cold. Nothing terrible, but annoying cough, congestion, and sore throat. Oregano is an oil that can help with all those things. But lets face it – its Oregano! When I smell it, all I can do is think of Italian food! So, I took my usual lasagna recipe, and added three drops of Oregano essential oil. Three drops. That’s it! And honestly, two drops probably would have been enough. But holy moly, did those three drops make my kitchen smell amazing! It really gave the lasagna a little extra somethin, somethin that it’s always been missing.

Weight Watchers Beef Lasagna


9 oven-ready lasagna noodles

1 teaspoon olive oil

1/2 pound ground beef

1 onion, chopped

1 zucchini, chopped

2-3 drops Oregano essential oil

1 (26-ounce) jar of favorite marinara

1 1/2 cups fat-free ricotta cheese

1/2 cup shredded mozzarella cheese


  1. Heat oil in a large skillet over medium-high heat. Add beef, onion, and zucchini. Cook, stirring occasionally, until beef is browned and pan juices are evaporated, about 10 minutes. Add essential oil drops and stir thoroughly.
  2. Stir in marinara sauce and bring to a boil. Reduce heat to a simmer until sauce is slightly thickened, about 10 minutes.
  3. Spread 1/4 of meat sauce in 9×13 inch baking dish. Cover with 3 lasagna noodles. Spread 1/2 cup of ricotta on top. Repeat layering twice, ending with meat sauce.
  4. Cover baking dish with foil. Bake for 30 minutes. Remove foil and sprinkle lasagna evenly with shredded mozzarella. Bake until heated through and cheese is slightly browned, about 20 minutes longer. Let stand for 10 minutes before serving.


Did you notice that this recipe only takes a 1/2 pound of ground beef? The onion and zucchini make the filing more…. well, full! That makes it lower in calories, but I promise you, the taste is amazing! You would never know that this is a low calorie recipe!
